MPM Week 6

I start back to work this week so we will see how meal planning plays out. I am thinking it will be easier for us. I am gonna make a couple dishes this weekend and just freeze them so it makes it easier on Shawn to get dinner ready.

Chicken Broccoli Divan over biscuits

S&B Pork Chops, Mashed Tater, Gravy, Corn and Crescent Rolls

Thursday 2-10
Ham and Perogies in brown butter sauce, Green Beans and Cresecent Rolls

Friday 2-11
Chicken Enchiladas
We are gonna try this for the third time. Lets see if it works.

MUSIC

The other day for breakfast we had a baked french toast. It was so yummy and very sticky. Kayden ran across the living room with his hands out in to my chair with the pile of clean laundry (doesn't everyone have a laundry monster).

Shawn got up and was talking to him telling him he had done 3 things wrong. He asked him what was going through his head.

With out a second thought Kayden answered his dad and said MUSIC.

Well at least he was honest

MPM week 5

Last week was a yummy week - I got off track at the end of the week but sometimes ya need to be defiant.

A review from last week and a couple of recipes.

Sweet and Sour Pork

1 pound pork - cut into chunks
1 cup Bisquick
1 egg beaten

2 tablespoon corn starch
1/4 cup brown sugar
20 oz can chunk pineapple drained (save juice)
3 tablespoons vinegar
2 tablespoons catsup
2 tablespoons soy sauce

Dip pork chunks in egg and then coat in Bisquick. Deep fry till golden brown.

Add pineapple juice and enough water to make 1 2/3 cup liquid

In a large pan combine the corn starch, brown sugar and pineapple/water mixture stir together, Mix in the vinegar,catsup and soy sauce, whisk together. It will start to change to a darker brown, Add in pineapple.
Serve over rice.

This was a recipe my mom made growing up. I loved it and have continued to make it for my little family.

Spicy Chicken Tacos.

3 chicken breast 
4 chicken tomato bullion cube 
a couple dashes tapatio - depends on how spicy you like it.
a couple dashes chili oil - once again depends on how spicy you like it.

Fill a large pot with water, Add in chicken breast and 3 bullion cubes, tapatio and chili oil. Cook until chicken done. Chop each chicken breast into small chunks and put back in pot and cook a little longer (about 5 mins) Drain all the cooking liquid. in a fry pan add a little veggie oil, 1 bullion cube and a couple more dashes of tapatio and chili oil. Fry for about 5 mins.

Serve on warm corn tortillas with your favorite taco topping. We enjoy ours with - ranch or sour cream, cheese, tomatoes and avocado.

I got this recipe from a friend who was dating a Mexican guy. She made these for him all the time. I love them. So do the people I make them for. You got to try them.

Chicken Lettuce Wraps and Rice
Gonna get moved to next week. I had a Birthday dinner with some NA people and Shawn made some chicken pasta stuff.

Tuesday 2-1
Meatloaf Muffins, Mashed Taters, Brown Gravy and Corn.
We are having company over for dinner and he requested meatloaf.  I have not made meatloaf in a while so I am gonna look and see if I can find a good one. Will post a review.
Update - This was so yummy. I made BBQ bacon rance meatloafs with stuffed baked taters. YUMMY !!

Wednesday 2-2
Grilled Teriyaki  Pork Chops with Pineapple Salsa and Macaroni Salad 
Once again moved to later this week or next. Shawn is going to a awards dinner and I am staying home with bubba. Cant decide hat to make.

Thursday 2-3
Chicken Enchiladas
Made with chicken from this recipe

Friday 2-4
Grilled Pizza
Gonna be on the look out for a good dough recipe.

MPM Week 4

Monday 1-24
BLT,Chips and Fruit
I had made homemade bread to go with this but Kayden decided that he could not wait for dinner and ate the middle out of my fresh bread.

Tuesday 1-25
Spicy Chicken Tacos and Fresh Fruit
We love these. made it with some mexican rice.

Wednesday 1-26
Grilled Bacon Cheese burgers, Baked Beans and fries.
I did not feel like getting together all the stuff that goes with grilled burgers so we just had fried with mashed taters and gravy. It was super yummy

Thursday 1-27
Ham and porgies with Garlic butter sauce,Green Beans and French Rolls
What a slacker I was today. We had Chicken Nachos with all the fixens. I will maybe move this to next week.

Friday 1-28
Sweet and Sour pork, Rice and Egg Rolls

Saturday 1-29
B - Puffed apple pancake and sausage

D - Maybe out ???

Hookie

I think I have that word right.
Kayden woke up late this morning, I bet if I had not turned his light on he would of slept a little longer.

I am usually pretty hard on him about going to school everyday. But today I thought I would be nice and he could spend all day with mom.

So we are just gonna have a nice relaxing mommy and son day.

We got up and made big breakfast as he calls it. He wanted egg, bacon and toast but I did not have any bacon in fridge. So he settled on eggs fried in bacon grease and toast. He fried his egg and put down his toast and helped me with mine as well.

After big breakfast we are gonna go to walmart and then we are gonna get dad some lunch, He needs a lite one today cause he has a PT test this afternoon.

After lunch I think we will make cookies together. I love Mommy and Me time.

It amazes me how much having a meal plan helps. It takes the questions out of whats for dinner.

Monday 1-17
Swiss Dips, Fries and Fresh Fruit
These were really yummy, I used pot roast and added some swiss cheese.

Tuesday 1-18
Teriyaki Chicken Skewers with Pineapple, Rice and Egg rolls (Link)
This is a TOT recipie and we love it. Shawn made up a triple batch of the sauce so we have it handy.
