Banana Bread

While I was staying with one of my really good friends in WA a couple of years about she gave me a recipe for The Best Banana Bread EVER. It is like crack. You cant just have one piece or one muffin. I make it in large loaf pans, small ones, reg muffins and mini muffins. Well today I did small loafs since I wanted to share it will some poeple and was gonna take it to my Thursday night meeting.

Boy howdy is it good. I like it best right out the oven with sweet cream butter. You have got to try this recipe.




Pineapple Banana Bread


3 Cups Flour
3/4 teaspoon salt
1 teaspoon baking soda
2 Cups sugar
1 teaspoon ground cinnamon

3 Eggs, beaten
1 Cup butter - Melted
2 Cups mashed banana
1 Eight (8) ounce can of crushed pineapple, drained
2 teaspoons vanilla

Directions:
Combine first 5 ingredients

In a LARGE separate bowl combine remaining ingredients, add flour mixture to this wet mixture

Stir until dry ingredients are well folded in and moistened

Spoon batter into greased pans (loaf pans, muffin tins whatever)

Bake at 350 for about an hour and ten minutes (70 minutes) give or take depending on your pan - bake until a toothpick comes out clean .

Wordish Wednesday - New Toys

For both Kayden and I.

For Christmas Santa got Kayden a new marble tower. He loves it. He plays with it all the time. Well we have been cat sitting while out friends where out of town and the cats also like Kaydens marble tower. So Kayden has decided that my pantry is the perfect place to play. He has taken over my pantry and if I go in there while he is in there he pushes me out.



As for my new toys I have found a kitchen supply store here in town. I think I am in heaven. I have been wanting a new cutting board and also the cool pizza grats that pizza places use. I was able to find them there. So as planned we has pizza for dinner last night.

Dinner - Ya mean I have to cook.

No really I love cooking and I do better when I plan it out but I have been having a really hard time planning out meals. It's not that there is a lack of food in the house either. So here is what I have come up with.


Monday - Homemade Pizza and Mozzarella sticks

Tuesday - Baked Teriyaki Chicken, Rice and Steamed Broccoli

Wednesday - Lemon Pepper Pork Chops, Mashed Taters and Gravy, Corn

Thursday - Chicken Pot Pie

Friday - Out for Chinese and then to take Bubba to watch a ball drop at 6 for the kiddos

Saturday - Ham, Hash Brown Casserole, Pineapple Stuffing, Broccoli Cheese Casserole and Rolls

Christmas Morning

I know I should be spending time with the family and not posting on my blog but I had to get this done so my MIL can see pics of Kayden while she has internet access later today.

Christmas morning was wonderful. Kayden did not wake up until almost 8 and came into our room telling me that Santa had come and brought him presents. We got out of bed and found our loot. I will let the pics tell the story.

Christmas Eve

Well Santa has came and left our house. Gifts are under the tree, Cookies got eaten and all is ready for Christmas morning.

Today was good expect that both Shawn and I are sick. But we made it though. Shawn let me sleep in and then I took Kayden so that he could sleep for a while. Kayden and I went and got lunch and did some last min shopping and get food for tomorrow. We stopped by Wal-Mart was surprised it was not that busy. After we got home and woke Shawn up we headed to Pensacola but not before another stop to Wal-Mart. I should of asked Kayden while we were shopping what kind of cookies he wanted to make when we were out before hand but I forgot and he wanted to make Santa sugar cookies with frosting and sprinkles. So we stopped at to get stuff to make sugar cookies. Could not find any sprinkles so the nice lady at the bakery gave me a little bit for Santa's cookies.




After that we headed to Dinner at Sonny's a BBQ place out here. It was bad. We have been there before and love it but this time not so much. After dinner we headed out to look at some lights. We had heard of some and headed there and were disappointed. Was gonna try to Zoo Lights but they were closed so we drove down a street and Kayden was happy. We headed home to make our cookies and read - Tis the night before Christmas. My parents sent Kayden a book where they were reading it to him. He loved it. Thanks Gammy and Papa. After finishing the book and hot coco in our new jammys. Kayden finished up his cookies and ran off to bed so Santa could come. He would not even kiss me good night.





Santa has came and gone and I am now watching - A Christmas Story. I have to watch it every year. I am about to head to bed. Merry Christmas to all and to all a good night

Waterballs

For Christmas from Grandpa and Grandma Pritchard Kayden got 10 bucks. In the mall out here they have these huge hamster balls and they are on water. Kayden has been asking to go in them but I tell him we dont have the money - Really I dont want to waste the money on them, So when he opened his card and found money - First thing out of his mouth was " I have money can I do waterballs. It was his 10 bucks and I was not gonna tell him no.

On Sunday we went to the mall so he could go to waterballs. He had a blast.





Thanks Grandpa and Grandma Pritchard for a fun filled time. He had a blast.

3 days. . . .

I cant believe that Christmas is almost here. It is crazy. I am ready just need to wrap and put stuff under the tree. Kayden is gonna go get Shawn a present today.

We have some friends going out of town and we are cat sitting. I am not a cat person. I had Kayden clean up his mess so the house would be clean when they got here. When he was done he came up to me and asked me if I was happy with him and I told him yes. Then he asked me if he was the my best Kayden in the world, Of course he is the best Kayden. I love when he says stuff like this.

Off to clean up the house some more and do some more baking.

I love Saturdays

I love them even more when I get to spend then them with boys.

So far this weekend has been WONDERFUL.

Yesterday I went shopping with a good friend. Got Kayden a bunch of new clothes cause he has decided that he needed to grow. Let me tell ya he is harder then heck to shop for. At almost 5 he is only 35 pounds and 42 inches tall. Can ya guess what size pants he wears. He needs a 24m waist and a 4 boys for the length. It makes finding pants hard. But we found some good deals and he should be set for the rest of winter. Later in the evening Shawn and Nate went to see Tron in 3D. Shawn said it was Bad Ass. Kayden got to go to an NA meeting with me and thought that was pretty cool. I tried to teach him the serenity prayer. It starts out God grant me the peace. He asked me what God was. I did not know how not know how to answer that question. He says the darnedest things sometimes.

On Saturday He slept in till almost 830. It was heaven. We could not decide on what to have for breakfast so decided to go out to Destin and go to Cracker Barrel since I had to go out there anyways. While out there we went to Best Buy to see if they had The Nightmare Before Christmas. While there I wanted to look and see if they had any deals on TV's. Well we get lucky and they did. We got an LG 32in that was 449 for 299. Now we are sitting here watching TV on out new big screen. Later we went to get Kaydens hair cut. He had been saying he wanted spikey hair like mine. So we got him a Mohawk and he looks so cute.

He is now settled into bed and we just got done watching his new movie. Can't wait to see what tomorrow brings.

Winter Break -

Or should I call it Christmas Break since it does not seem like winter down here. We had a couple of days were it was down in the 30's but now we are back in the 60-70's. Kayden wants snow for Christmas. I hate to break it to him the it don't snow in FL.

He is home for 2 weeks and I haven't a clue what do to with him to keep him busy. I have a couple  Christmas art projects that will keep him busy for all of 20 mins. Am thinking we might make plans with some old friends from our mommy group and one of the girls he goes to school with. Otherwise it is gonna be a long break.

Anyone have ideas of how to keep a 4 year old busy ??

Out of the mouth of my Son

Tonight was Kaydens Christmas program at school. He has been practising all week.

His class sung - I saw mommy kissing Santa Clause and Up on the house top. Anytime he would practice this week it would make me giggle.

Today while I was in the kitchen he came into the Kitchen and told me I needed to kiss Santa Clause, Little does he know.

When he is so cute it make me forget the time that he is such a butt.

Our Christmas Tree

 

Here is our tree. I wish it was real. But in FL the best to fresh cute you get is from walmart. We drank hot coco after dinner and Kayden had a blast putting on all the ornaments. I made a comment to our friends that I was surprised that it did not fall over cause it wanted them all in one spot.

 

And one of my little man just cause I think he is cute.

Lazy Sunday

Shawn just asked me when we are gonna get in the shower. I told him I was being lazy today !!!

We are gonna stay home and decorate the Christmas tree, Drink hot coco and Listen to Christmas music.

It is cold outside so thinking of making creamy onion soup for dinner. 

If I am feeling up to it I am gonna go to the alumni meeting tonight at 12 Oaks.

Will post pictures later of our Christmas tree.

Oh one other thing. ANXIETY attacks suck a big one. I was on abilify for a while. It is used as a mood stabilizer and was working but wanted something stronger cause I was having anxiety attacks a couple times a day and they are not fun. I also needed something for sleep so the Dr put me on Seroquel. It almost works too well. I sleep good but am tired during the day and have gotten to where I am only one attacks once or twice a week, But the being sleepy stuff I cant handle. I have stuff I have to get done. I have started taking them every other day but then yesterday I had 4 anxiety/panic attacks in one day. IT SUCKED. I told Shawn that having to feel my emotions and feelings is taking some getting used to. For the last 8 years I would hide from them and now I am not. I dont know if I want to go to the Dr and have him try something else or just deal with it.

Once Again....

So once again it has been a while since I have posted. Once again so much has changed. I think I might change what I use this blog for.

I have noticed that on facebook alot I am posting about my personal life. While I don't have a problem putting it there I think I want something more concrete.

So life has been going WONDERFUL. I went into a 30 day treatment facility back the end on Oct and got out the day before Thanksgiving. Most people in my life have never known that I was an addict. Well I am and I am not proud of it but I am. I have started getting the help I need. It first started with going back to treatment since this was my second time through. I don't think I was ready the first time. I found a sponsor before I got out and have been going to NA meeting almost every night. I try to talk myself out of it almost every night but am getting better about that. I am going to start working my steps this weekend and am a little nervous about that one. But I have to start sometimes. You will be hearing lots more about life an addict.

That's all for now. Will try my best to come back at least 4 times a week with updates on me and my recovery. Might try and through so recipies and stuff in from time to time.

So I said I would update

It had been a while.

Last time I wrote I had just started a new job as a banker and for the most part loved it. Well over the last 6 months I have grown to hate it. Not the job but the other teller are what turned me away from it. Mean Girls comes to mind. I wanted to quite so bad but told my self that no matter where I work I would find people that I did not like. So I stuck it out.

Other then life nothing really happened till about a month or so ago.

I woke up the morning after the 4th of July weekend and hurt like heck in my ribs. Shawn told me to go to the ER and I told him I had to go to work. I went to work and then left to go to the ER. I won my self a week long stay in the hospital. I got what they call narcotizing pneumonia. If you don't know what it means the look it up cause the only thing I know is it is flesh eating. I ended up with a couple of holes in my lungs. My mom was wonderful and came down to help while I was getting better. Boy do I miss having her so close and Kayden misses his grandma. But despite being sick we had a wonderful time together.

Due to missing so much work for being sick they put me on a written warning. I went home that night and really thought about what I need to do, What was best for my family? What was best for me and my health? Well I decided that I needed to quite my job and focus on my family and my health - Two things that have really struggled since I have gone back. It will be tough but it will be worth it in the end.

So that is the short of the last 6 months.

I am once again a stay at home mommy. Kayden goes to Preschool from 830-1130 and then will be home with me in the afternoon. We are gonna try to get back involved with the mommy group and also with other spouses in Shawn's squadron. I am focusing on my health. I have lots of appts in the up coming month. I get to go back to the cooking and cleaning and all that fun stuff that I have missed. I can taste the fresh baked bread now :)

Been in a . . .

Funk I guess you could call it. Life is going better then I could ever want. We have started making friends and I am working again. I have a wonderful hubby that is there for me when ever I need him. I dont know what it is but just I dont know what it is but something is just right.

Enough about that.

We have had an awesome weekend. Had 11 poeple over at our house for a little BBQ on Sat. Made my Grandma's Stinky Steak and Tater Salad. Everyone loved it. The boys played rockband and the kiddos helped out. Kayden made another new little GF. He is quite the ladys man I tell ya.


Today we went out to lunch with Uncle Dennis and our new friends. We then decided to go down to the beach. The kiddo played a while and then we decided it was still a little cold. Maybe next weekend.


Gonna try to get our house all clean and ready for this next week. Lets hope it is a good one.

COOKIES

Yesterday at work I walked in the back and say a box of the beloved one time a year prize.

GIRL SCOUT COOKIES.

I needed them, I wanted them but they where for her hubby.
Shawn said that the other day a lady he works with came around taking preorders but he was gone.
I told him to hunt down that person. I needed cookies.

Today on the way home from the beach we had to stop by Walmart.

I was hoping that maybe there would be some outside.

Well color me purple. There was GS and they where selling cookies. After my shopping I got me 3 boxes and Shawn his one. I think I might need more. Kayden is too you for them I think there is an age limit on them. HEHEHE :)

All is right in my house tonight I got GS cookies.

BUSY BUSY AND MORE BUSY

Life has been busy - SO much has happened since I last posted. Not like I have a ton of people that read my blog or anything. but still.


We now have Shawn's car back.. He flew to Vegas a couple weekends ago and drove it back. It is nice to have 2 cars again with me working. That is when the busyness all started. I took Kayden to a Mardi gaud parade. It was one of the worst I had ever been too. The people on the floats wanted to ignore the kiddos and pay attention to the drunk adults. I just don't get it. After that we went and had his pictures taken in Pensacola and had a fun time out there. One of my list of things to get done today is getting pics in the mail. It will make some people very happy. On Sunday Kayden and I did our weekly shopping and Shawn got home just in time for dinner. He had the next two days off so tried to catch up on our everlasting pile of laundry and pick up the house. He needed to take Kayden to get his H1N1 mist,. I would not of had it done but since I am back at work and he is in daycare they require it. Shawn was telling me about there experience. He said that Kayden walked up to the Tech Sergeant in his blues and asked him if he gave a military discount. If I had been there I think I would of crawled under a chair. I told Shawn it either means that he is out with his mother too much or is mom is shopping too much. Oh well. Cute none the less.

We have been busy at work. We are a little short handed, It makes the day fun !! I am still loving my job and going to work every morning. Kayden has started acting out in daycare. I don't think he likes me going back to work. it is not that he does not like Ms Nicole but that he misses his mom and he is gonna see how far he can push her. He ended up grounded this week from toys and cartoons cause he could not mind her and was hitting and being a bully. It does not seem to faze him when he gets stuff taken away. We are gonna have our hands full.

The last weekend was valentines weekend and we had a wonderful but yet busy weekend again. We stayed down at PCB for the night so that Shawn could take me out to a Brazilian Steak House. It was yummy and I felt like I could of eaten all night. I would of if we had not had a child with us that was bugging us to leave. We stayed at a nice hotel on the beach and went for a walk in the morning. I could not decided if we wanted to stay another night or head home. We decided to head home but really ended up in AL for the night to see Austin, Adam and Elle. We had a wonderful visit and the boys played so well together. Austin is doing better then I ever thought he would be doing.


After the weekend it was back to the grind., Shawn has been coming to have lunch with me quite often and I love seeing him in the middle of the day and just having lunch the two of us.

This weekend we are laying low and gonna try to catch up on stuff that has been getting missed. I HAVE to get back in to meal planning or well we just eat out way too much, I have enough food in the house to feed a small army.

Off to get stuff done and might be back later to update the look of my blog. We wills see.

Southerners

You would think we are real Southerners not ones implanted from the north. This weekend Shawn smoked a couple of pork tenderloins. He made homemade BBQ sauce and I made Coleslaw, Baked Beans, Cucumber salad and a yummy pound cake. For dinner tonight I made Fried Chicken with buttermilk gravy, Mashed Taters, Corn and homemade buttermilk biscuits. We always have Sweet Tea in the house and I use real butter in almost everything.

I told Shawn after visiting AL last May that I should of been born and raised a southern girl. Give me Sweet Tea, A big front pouch and a swing and I am set to go.

In other new I still love my job. Love the people I work with. Kayden is doing better at daycare and his little GF has been there there there the last couple of days. If you ask him if he has a GF he will tell you he does and what her name is. It is pretty cute. Shawn leave to go to Vegas for the weekend to get his car and drive it back. He is gonna stop in CO to fix my moms computers on his way home. I am sort of nervous about it since his car has not been driven since last Nov as in Nov of 08. Please say a little prayer that he makes it back ok. He also just found out that he gets to go to training in MI starting March 3rd for 26 days but will be home on the weekends. It is gonna be interesting being a working mom while he is gone. I know I can manage. Other wise not much is new in our world. My Dr appt went well and we have started the process to get us prego again. Wish us lots of luck. We said we would try for a year and if nothing happened then we were gonna be happy with our family of 3

Why do they are to make it so hard ????

So I have been back to work for almost a week. I am loving it so far. Today I was giving my own teller number with all my own monies. I love being back at work. So far so good on keeping up on our weekly menu. Dinner the last two nights have been delicious. We almost fought over who got left over chili for lunch today. WE MAKE A GOOD TEAM. Both in the kitchen and in our day to day life.

Since I have been back to work Kayden is going to daycare. This morning when I dropped him off he clung to me and did not want me to leave, I hate he does this, I know he loves going to daycare and makes many friends and learns all sorts of cool stuff. Today Mrs Lacole as he calls her taught them about cylinders and some he some how connected that a tornado is a cylinder and also a cyclone. My little boy is so smart. He also made a new friend at the park. I think he likes her, When I would ask him about her he would get all shy and start to smile big. The wonderful parts that go along with being a mommy.

Tomorrow I get to go see the Dr's, Shawn and I have been talking about for a while now wanting to add another member to our family but my body is not working with us. We will see what they want to do with me. I don't know if I am looking forward to it or not. Last time I had to take these kind of drugs I was a mad woman. Ask Shawn sometimes about pancakes and Valentines dinner. I love you babe.

Cream Cheese Pound Cake

OH MY !!!!

I am so darn proud of my self right now. A lady I work with was telling me about this cake and how she tried to make it and it over flowed all over the oven and burnt. I asked for the recipe and told her I would try it this weekend. I am so glad I did and cant wait to take her a piece tomorrow morning.

It is just heavenly and yummy and you don't need to add anything to it.

Cream Cheese Pound Cake

3 Sticks Real Butter - Softened
3 Cups Sugar - yes you read that right
8 oz of cream cheese - Softened
6 Eggs - room temp
3 Cups Flour
2 Tsp vanilla

Cream together the butter, sugar and cream cheese. Alternating add an egg and then some flour till you have it all mixed together. Add in the vanilla. 

Grease a tube pan and pour batter in pan. Bake at 300 for 1:30.

Been Busy

First off I want to say - I LOVE MY JOB !!!

Thing have been going great, They put me almost on my own on Friday. I am just that good.

Thing at home have been busy. Yesterday we got all our shopping for the week done and I was able to pick up some new work cloths on clearance at Old Navy I for 3 skirts and 5 shirts for 28 bucks. Today we have been home all day and looks like it is gonna stay that way, Maybe before dinner We will take a walk on the beach. Been cooking up a storm to get ready for the week, Chili is done, Pork is in the crock pot cooking, Teriyaki sauce is made, Chicken salad is done and I am gonna make a cake in a little bit. Still need to get some cleaning done - But that stuff is no fun :(

We went out to dinner to Kayden favorite restaurant for dinner on Friday, It is a local place called Fudpuckers. When ever the word got out to eat comes up he always wants to go there. They have the best hush puppies, I need to learn how to make them.  They also have a bunch of baby alligators.

Gonna go start my cleaning and getting ready for the next week. Hope everyone had a good weekend.

Dinner The Last 3 Nights

So I have been really bad the last couple of nights with posting about my dinners or even taking pics. The last one I took pics of was Spicy Chicken Lettuce Wraps. SO GOOD. If taste like some of the ones you get at fancy restaurants. But mine are better and so easy. Shawn does not like his wrapped in lettuce so I serve them with rice and garnish with chopped peanuts. Shawn made the rice to go with it and of my I could of eaten all the rice, I don't know what he did to it but it was good.




Asian Lettuce Wraps

1 Tbs veggie oil
2 Tbs minced onion
1 Tbs minced garlic
1 lb cut up chicken
1/2 cup soy sauce
2 Tbs bottled chili sauce
1 Tbs granulated sugar
1/3 cup minced peanuts
1 head butter or Boston lettuce, separated


1. Heat oil in a wok or large skillet. Stir fry onion in hot oil for several minutes. Add the garlic stir fry for 1 minute. Add the meat and separate for even cooking. Stir in soy sauce, chili sauce and sugar.

2. Cook until meat is brown and crumbly and the liquid is reduced, stirring frequently. Spoon the meat mixture into a serving bowl. Place peanuts in small bowls and the lettuce on a platter.

3. Self serve: Spoon meat mixture onto a lettuce leaf and minced peanuts, and roll tightly.



 
 
Second night I have not posted about was Yummy Pork chops. Yes the are really called that and they are really yummy, I get to have left over for lunch tomorrow and am looking forward to it. We had rice with this too and I don't know why but it was not as good as the first night and Shawn cooked them both times. I forgot to take a pic of dinner but oh boy it is good or should I say YUMMY.

Yummy Pork Chops


2 cups Italian-style salad dressing
1/4 cup soy sauce ( I do about ½ or what ever looks good that day)
1/2 teaspoon pepper
4 boneless pork chops
1 Large onion – Sliced

In a bowl, mix the Italian-style salad dressing, soy sauce, and pepper.

Place the pork chops and onion in a skillet over medium heat, and cover with the dressing mixture. Cover skillet, and cook pork chops 25 minutes, turning occasionally. Remove cover, reduce heat to low, and continue cooking to desired doneness.

Today was my first day back and work and wanted something easy for dinner, I had some frozen raviolis and made up some homemade spaghetti sauce and popped it in the over for a little while with some cheese. I served it with roasted cauliflower and left over french bread, So yummy. I forgot to take a pic tonight too.
Maybe tomorrow I will remember before I eat it all.

Roasted Cauliflower

half a large cauliflower (trimmed/cut to bite size)
4 Cloves garlic, peeled (I use more I love it)
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup olive oil, plus more to drizzle
Parmesan Cheese - Shredded

1. Mix oil, salt, pepper and garlic together
2. Toss in cauliflower and place in a large casserole dish.
3. Roast in a preheated oven of 450 degrees for 20 mins then pull out give it a toss and add cheese, return to oven for an additional 10 mins.

Oh no she did not !!!

SO I love my new job so far, and don't think it is gonna change. Most be have been there for a long time.
It is a small bank, there are only 4 branches and I am working at the main one. With me going back to work a M-F job we had to put Kayden back in to daycare.

Well the provider that we chose was out sick today so she found someone else we could take him to for the day. Let me start by saying that I had a bad feeling from the get go on it. I did not have a copy of all his records with me but the other provider was gonna email them over to her. She called Shawn at 11 this morning and told him that he needed to get her a copy of the records now or he had to come pick him up. We are down to one car for two more weeks so that was gonna take a little work. She told him that she was afraid that she was gonna lose her license over this. So her hubby picked Shawn up from work and took him to get a copy of his records and took him back to work. What a pain in the tosh.

Fast forward to me getting home I am asking Kayden how his day was and he tell me that he got to go to the park. Mind you all the parks on base are in walking distance form this lady's house, He proceeds to tell me that she let him ride in the front seat with out a car seat. Kayden is almost 4 - He does not know how to lie yet. I asked him I cant tell ya how many times and different ways I asked him about this. The answer was always the same. I called and talked to her and she told me that according to FCC policy she can let him ride in the front cause her airbag will turn off and that he was in a car seat, That she has 4 car seats, Funny thing she had 5 kids today. Long story short I am reporting her tomorrow morning. That is not OK to let my baby ride in the car with no car seat.

I am glad he is going to the other provider tomorrow.

mexican sandwich

We had some chicken, steak and a lot of veggies to use up so I made up some quesadillas. They were super tasty and think I will make the steak ones more often. It is a good way to use left over veggies. I had green peppers, onions broccoli and corn and topped it all with a little monterey jack cheese. The possibility are endless with this.




Quesadillas

8 Tortilla
1/2 cups cooked steak - Sliced
1/2 cups cooked chicken - Chopped
1/4 green pepper - Sliced
1/2 onions - Sliced
1/2 cup chopped broccoli
1/4 cup corn
1 cup monterey jack cheese
1/2 cup butter


Fry green peppers in a tablespoon of butter, just to take the bite off. Repeat with other veggies.
Spread one side of tortilla with a little butter and lay on griddle, Top with a little bit of cheese and meat and veggies that you want. Top with another buttered tortilla. Flip when the cheese starts to melt and then tortilla is browning.
Slice in to quarters and servce with sour cream.

Better then IHOP

Well unbeknown-st to be Shawn LOVES pancakes. I have been planning to make them for a while but have been putting them off since I am not fond of them.

Up in my recipe basket (the needs to be cleaned) I had a recipe the I had tried before and liked. Well I decided to bit the bullet and make them for Shawn again.

They were better then I remember. The only down side is if you have a small family you will be eating pancakes for a while. I had enough to freeze for 6 different breakfast. it is nice, Shawn can just pull a bag out of the freezer and take them to work and he has homemade pancakes. Kayden loved them too, He ate everything on his plate - This does not happen often. He told me they were better then IHOPs.

Pete's Scratch Pancakes


2 cups flour
2 T baking powder
3 T sugar
1 tsp salt
2 eggs, beat them separately before adding to mixture
1/4 cup butter, melted (1/8 of a pound)
1 3/4 cups milk

Mix the dry items first. Melt the butter, whisk in the eggs, and then slowly whisk in the milk. Stir in the dry ingredients.

Let sit at least 10 minutes while heating the pan.

These will be high, but light and fluffy.

PIZZA

I must of been in a homemade mood yesterday - I also had homemade pizza for dinner. I love this recipe and have been using it for a couple years. Our favorite way to make it is on the BBQ but we did not do that last night. I made a double batch and froze 3 of them so that when we want pizza I just have to grab one out of the freezer.

Last night I made it with pepperoni, salami, bacon and fresh pineapple. We are known to also make a garlic chicken, BBQ chicken and taco pizza. This recipe also makes good bread sticks.





This one I got of  Cooking for your family a couple years back. I love that site.

Master Pizza Dough


3 to 3 1/2 cups all-purpose flour
1 package FLEISCHMANN'S RapidRise Yeast
3/4 teaspoon salt
1 cup very warm water (120 to 130oF)
2 tablespoons olive or vegetable oil
Cornmeal

In large bowl, combine 2 cups flour, undissolved yeast, and salt. Stir very warm water and olive oil into dry ingredients. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 4 to 6 minutes. Cover; let rest on floured surface10 minutes.

Lightly oil 1 (14-inch) or 2 (12-inch) round pizza pan(s).** Sprinkle with cornmeal. Shape dough into smooth ball. Divide and roll dough to fit desired pan(s). Bake in preheated hot oven (450)for about 10-15 minutes.

Desserts

I love baking but most days don't eat what I bake. I am excited that I am going back to work and that Shawn is back state side and has an office that he can take things to. With that being said I had a cookie exchange to go to for my mommy group and made this little beauties.




I could of eaten them ALL.
I was good and only had a couple but cant wait to have a reason to make them again.

Easy Pretzel Turtles


small pretzels
Rolo candies - one bag has about 55 candies
Pecan halves - or optionally peanuts, cashews, and m&m's

Optional: almond bark or white chocolate for drizzling

Preheat your oven to 350 degrees. Place pretzels on a parchment lined baking sheet.

Unwrap your Rolo candies and place one on top of each pretzel like a cute little hat.

Place pan in the oven for 3-4 minutes. Any longer is probably too long. You just want the chocolate on to look glossy and melty, but they should still hold their shape.

Remove pan from oven and take a pecan and gently press it right into the center of the chocolate candy.

Here's where you can be creative. You don't need to stick to pecan halves. I also love cashews and peanuts (I used honey roasted peanuts here). And for kiddos and those who can't eat nuts or don't like them, M&M's make a great little topper, or those mini Hershey's kissables are cute too. I always throw a few of those in for color and because the kids like them.

If you want to get fancy you can give them a little drizzle of almond bark or white chocolate. Just melt some in a plastic baggie and nip the corner off to drizzle. A little goes a long way; I used a half a square of almond bark for half a batch and had plenty left over.





Also the other day I was board and wanted to back something. Being in the kitchen is a stress reliever for me. I had some banana in the freezer that I wanted to use so I whipped up a couple loaves of Pineapple Banana Bread. SO YUMMY !!! I froze one and we have been munching on the other one.

Pineapple Banana Bread


3 Cups Flour
3/4 teaspoon salt
1 teaspoon baking soda
2 Cups sugar
1 teaspoon ground cinnamon

3 Eggs, beaten
1 Cup butter - Melted
2 Cups mashed banana
1 Eight (8) ounce can of crushed pineapple, drained
½ Cup coconut
2 teaspoons vanilla

Directions:
Combine first 5 ingredients

In a LARGE separate bowl combine remaining ingredients, add flour mixture to this wet mixture


Stir until dry ingredients are well folded in and moistened

Spoon batter into greased pans (loaf pans, muffin tins whatever)

Bake at 350 for about an hour and ten minutes (70 minutes) give or take depending on your pan - bake until a toothpick comes out clean .

FUNK

I hate being in a funk.

In a good note I start my new job tomorrow. I am excited and scared all at the same time. It is banking I know I will do fine. I am excited to be putting Kayden back into daycare and getting out of the house all day.

On a not good note, I put onion peel down the garbage disposal last night while I was cleaning up the kitchen to make dinner, I always let it run for a couple of mins after I think all the food is gone. It started backing up in the sink. I called maintenance and they said it it not important to call back today. THIS IS VERY URGENT MATTER TO ME !! I call them this morning they say tell me that I have to wait till tomorrow at 8 am. NOT OK. I have a kitchen to clean and a floor to mop. They should be out sometime today but that means I have to sit here till they come over and fix it. I love FL but am not loving the housing maintenance.
A lessoned learned - Don't put onion peel down the drain :)

Another good note - The house is getting all they way cleaned, I want to start tomorrow with a clean house.

Tonight I am gonna post a bunch with some new recipes. Lots of good stuff the last couple of days !!!

I love living in FL. It is the middle of winter and we went for a walk on the beach the other day !!! Forget about snow !!! Nothing beats white sandy beaches. The sand does get pretty cold.
