MUSIC

The other day for breakfast we had a baked french toast. It was so yummy and very sticky. Kayden ran across the living room with his hands out in to my chair with the pile of clean laundry (doesn't everyone have a laundry monster).

Shawn got up and was talking to him telling him he had done 3 things wrong. He asked him what was going through his head.

With out a second thought Kayden answered his dad and said MUSIC.

Well at least he was honest

MPM week 5

Last week was a yummy week - I got off track at the end of the week but sometimes ya need to be defiant.

A review from last week and a couple of recipes.

Sweet and Sour Pork

1 pound pork - cut into chunks
1 cup Bisquick
1 egg beaten

2 tablespoon corn starch
1/4 cup brown sugar
20 oz can chunk pineapple drained (save juice)
3 tablespoons vinegar
2 tablespoons catsup
2 tablespoons soy sauce

Dip pork chunks in egg and then coat in Bisquick. Deep fry till golden brown.

Add pineapple juice and enough water to make 1 2/3 cup liquid

In a large pan combine the corn starch, brown sugar and pineapple/water mixture stir together, Mix in the vinegar,catsup and soy sauce, whisk together. It will start to change to a darker brown, Add in pineapple.
Serve over rice.

This was a recipe my mom made growing up. I loved it and have continued to make it for my little family.

Spicy Chicken Tacos.

3 chicken breast 
4 chicken tomato bullion cube 
a couple dashes tapatio - depends on how spicy you like it.
a couple dashes chili oil - once again depends on how spicy you like it.

Fill a large pot with water, Add in chicken breast and 3 bullion cubes, tapatio and chili oil. Cook until chicken done. Chop each chicken breast into small chunks and put back in pot and cook a little longer (about 5 mins) Drain all the cooking liquid. in a fry pan add a little veggie oil, 1 bullion cube and a couple more dashes of tapatio and chili oil. Fry for about 5 mins.

Serve on warm corn tortillas with your favorite taco topping. We enjoy ours with - ranch or sour cream, cheese, tomatoes and avocado.

I got this recipe from a friend who was dating a Mexican guy. She made these for him all the time. I love them. So do the people I make them for. You got to try them.

Chicken Lettuce Wraps and Rice
Gonna get moved to next week. I had a Birthday dinner with some NA people and Shawn made some chicken pasta stuff.

Tuesday 2-1
Meatloaf Muffins, Mashed Taters, Brown Gravy and Corn.
We are having company over for dinner and he requested meatloaf.  I have not made meatloaf in a while so I am gonna look and see if I can find a good one. Will post a review.
Update - This was so yummy. I made BBQ bacon rance meatloafs with stuffed baked taters. YUMMY !!

Wednesday 2-2
Grilled Teriyaki  Pork Chops with Pineapple Salsa and Macaroni Salad 
Once again moved to later this week or next. Shawn is going to a awards dinner and I am staying home with bubba. Cant decide hat to make.

Thursday 2-3
Chicken Enchiladas

Friday 2-4
Grilled Pizza
Gonna be on the look out for a good dough recipe.

MPM Week 4

Monday 1-24
BLT,Chips and Fruit
I had made homemade bread to go with this but Kayden decided that he could not wait for dinner and ate the middle out of my fresh bread.

Tuesday 1-25
Spicy Chicken Tacos and Fresh Fruit
We love these. made it with some mexican rice.

Wednesday 1-26
Grilled Bacon Cheese burgers, Baked Beans and fries.
I did not feel like getting together all the stuff that goes with grilled burgers so we just had fried with mashed taters and gravy. It was super yummy

Thursday 1-27
Ham and porgies with Garlic butter sauce,Green Beans and French Rolls
What a slacker I was today. We had Chicken Nachos with all the fixens. I will maybe move this to next week.

Friday 1-28
Sweet and Sour pork, Rice and Egg Rolls

Hookie

I think I have that word right.
Kayden woke up late this morning, I bet if I had not turned his light on he would of slept a little longer.

I am usually pretty hard on him about going to school everyday. But today I thought I would be nice and he could spend all day with mom.

So we are just gonna have a nice relaxing mommy and son day.

We got up and made big breakfast as he calls it. He wanted egg, bacon and toast but I did not have any bacon in fridge. So he settled on eggs fried in bacon grease and toast. He fried his egg and put down his toast and helped me with mine as well.

After big breakfast we are gonna go to walmart and then we are gonna get dad some lunch, He needs a lite one today cause he has a PT test this afternoon.

After lunch I think we will make cookies together. I love Mommy and Me time.

This is a TOT recipie and we love it. Shawn made up a triple batch of the sauce so we have it handy.

Date Night

Date Night, What is that ?? Have not had one in forever.

Well the daycare that Kayden does his VPK at has a parents night out once a month and well this month we decided to take advantage of it.We had no clue what we were gonna do but we knew it did not involve sitting at home. we dropped Kayden off around 6 and headed down the read. It was a toss up between Olive Garden and Fire restaurant. OG won out. It sounds good but did not taste as good as I was hoping it would have. We took our time and sat next to each other and just we us. Boy was it nice. We could not decide what to do after that. While driving to dinner we passed a couple bingo halls and just being silly I asked Shawn if he wanted to go play bingo. Last time I had gone was back in Vegas and I don't know if Shawn had ever gone. So after dinner we hit up a bingo hall and spent all of 5 bucks to play for about an hour. We had fun. Did not win anything. I am really looking forward to the next parents night out. What will it have in store for us ??

Other then date night it has been a lazy weekend. Shawn and Kayden went to the park yesterday and I went to get my hair cut. Came home and did NOTHING.  It was nice but I get bored. I feel like I should be doing something. Today we are gonna clean and do laundry and watch the Seahawks play at 1. Tomorrow Shawn is off and Kayden is out of school. Don't have any plans for tomorrow either. Sometimes ya need a lazy weekend.

Hope everyone is enjoying there. Got to run the laundry is calling my name.

Got Candy ??

Between Halloween, Holiday parades and Christmas we have more candy then I know what to do with. Kayden does not get it a lot. He has enough energy that he does not need sugar to help. We have gone through it I don't know how many times and either thrown it away or I have sent it to work with Shawn. I have my stash that is just mine and Kayden cant have. It is so hard when candy from a holiday goes on clearance not to buy more but I just don't need it.




I had a little helper while making my cookies. I think this is his favorite part of baking with mom.

Well I was bored today and have been wanting to make cookies. I did a search for cookie blogs and came up with Cookie Madness. I think I found a new favorite cookie website. So many things look good. I ran across Smore Cookies and decided that I was gonna make them and gosh darn it I could use some of the candy that I have been trying to use up. So I got the candy off the top shelf and dug though it to find all my mini Hersey bars. I had just enough to make my cookies.



So off I went to make these little beauties. They smelled divine. I know if I try one I will have to try them all. My hips don't need that.

I strongly suggest you make these cookies.

Now off to find more recipes that I can use up more of that darn candy. Any Suggestions ???

1. This has been of lately - PIZZA. I will make it any way I can get it. Most times it is either on an english muffin or on boboli. So yummy. With lots of sauce, pepperoni and cheese. I have been eating it everyday for almost a month.








2. I am addicted to FB and Blogs. I love looking at other people likes. It is interesting stuff to me.

MPM - Week 2

This is my third week and have been doing really good. Meal planning helps so much. Takes the question out of what I am gonna cook unless I have a night like tonight were I still had pork chops but could not decide on how to cook them or what side to make.

What am I gonna make this week -

Monday - Over at a friends for Lasagna and football. We are gonna bring garlic bread. Should be fun.

Tuesday - Chicken Tacos (Link)
Don't think I will make these again. Just not what we look for in tacos, Did not have a lot of flavor.

Wednesday - Pineapple and Ham Melts and Homemade Chips (Link)
This was really good, I think it would be better with teriyaki sauce. The homemade chips were awsome.

Thursday - Out to Dinner - Sonny's BBQ - on Thur they have all you can eat beef. I LOVE IT !!

Friday - Chicken Fried Steak, Mashed Taters, Gravy and Biscuits

Saturday - Chicken Nachos (Link)
We ended up going out tonight for a date night, Will have Chicken Nachos tomorrow.

Sunday - Pot Roast, Taters, Glazed Carrot and Crescent Rolls
I cook up the roast and am gonna use it for meals down the road.

Organizing Week Uno


Here are some questions that I'm an organizing junkie has for week one. You can check out the orgional post here. and here is week one

1. Do you have your list written?
Nope not yet but something I hope to have done this weekend

2. What is the first thing on it that you hope to accomplish this week?
Dont know yet cause I dont have my list done. I will update when I have my list done
3. How are you going to make it happen?
I am gonna start my list

Like I said in the post before this I really want to organizes my house. Every things in it. All the rooms and closests and EVERYTHING. I am gonna sit down this weekend and make my list and then go from there. I want to work from one end of the house to the next. So that means we have to start with the pantry.

Amazed

It amazes me that one day I can feel like I have been shit on and the very next day feels like I am a whole other person.

Today was one of those days.

It started that I got a call from a bank that I have applied at. They called me for an interview for a position that I did not even apply for. YAY !!!

Got to go meet up with my friend Jilly and see one of my old counselors that I would talk to at rehab. We are supposed to get together on Monday to watch the football game. Should be interesting since we would be rooting for the opposite team as her and Mike. It was so nice to see her.

Took Kayden to Walmart to get stuff for sloppy joes. We had them on Tuesday and he has been asking for them every day since then. I am gonna freeze some for him so I can make easy lunches. While we were there I ran into my aunt. I ran into her at the hospital about a month or so ago and gave her my number and she never called.Well I got her number and plan on getting together with her soon.

I also see alot of blogs are doing 52 weeks of organizing. I need to do that. I am gonna work of getting started. Will post more on that when I get it figured out. I want to start with one end of the house and work my way to the either end.

After I get my butt off the computer I am gonna go get stuff ready for dinner. Cooking always makes me happy.

I love this, Could listen to it over and over. I feel this way about my life right now. I need to move on with my life and leave the bad in the past. I have to be responsible for me. I am gonna put on my big girl undies and move on with my life. If you don't like it then there is the door.

The people I care about and  love know who they are (I hope). I don't have time for peoples crap anymore.

Sorry if this seems like a downer post but somethings have happened in the last week and that song describes how I feel about it.

God, Grant me the serenity to accept the things I can not change, the courage to change the things I can and the wisdom to know the difference.

I have been looking at recipe for homemade bread. I have tried a few and think I have found one I love. I did not make it in a loaf pan I just made it my baking stone. It turned out so yummy. I think it was out of the oven for a couple of sec before I had to try some. It was heaven and will be with a blt tonight for dinner.





I also had a pomegranate that has been in the fridge for a while that needed used. I have been seeing recipes for Chocolate Chip Pomegranate cookies for a while but it calls for the little seeds and if you know me you know I don't do seeds. So I juiced it and used the juice instead. They turned out good but don't think I will make them again. I ended up using almost 3 times the juice as the recipe calls for. They are more cake like then I care for but good none the less.

What do you mean there was no VPK today

So looking at the school calender it says that winter break was from Dec 17 - Jan 3rd.

We both got Kayden up and ready for school today. Shawn took him since he had the day off and then came back home and crawled back in bed with me. We both decided to pick him up from school and then go out for lunch. We went to check him out and the lady at the front desk was looking at us funny. I asked her if the kids were out of school today. Yep she says. I then thanked her for my 3 hours with out Kayden and went to get him from his class room.

Well I guess I need to learn to read school calender.

Meal Plan Monday - Week 1

So last week I did a really good job of sticking to what I said I was gonna make.

I love having things planned out, For me it makes dinner time easier. Now I don't like the tasking of thinking what we are gonna have. It always seems to take me forever.

Monday - Thai peanut lettuce wraps and Rice

Tuesday - BLT with cheese and Homemade jojo taters.
Made this with homemade bread and soup instead. The bread was so yummy !!

Wednesday - Steak Sammy and Onion rings

Thursday - Ham fried rice and Egg rolls

Friday - Pretzel Dogs and Cole slaw

Saturday - Yummy pork chops, Rice and Green Beans
We ended up having the Lasagna today because we had my aunt and uncle over for dinner - It turned out so yummy.

Sunday - Lasagna and homemade bread
We are gonna have pork chops tonight. Instead of Green Beans I am gonna make up some steamed broccoli
that needs to be used up or I might roast it.

See told ya I was having a hard time. I feel like we are eating a lot of easy foods this week.

Along with meals I am gonna try to make a loaf of bread on Tuesday and also on Sunday. Going to make cookies when ever I feel the urge.

HAPPY NEW YEAR

WOW - What a year it has been. Glad to see it go and see what the new year brings.

I have gotten and quite a job, I have found my way back to rehab, I have learned a lot about my self and why I do some of things I do. Have made some really awesome new friends and have worked on my relationship with Shawn. All in all it was a good year but am looking forward to what 2011 will bring.


Last night we had fun. Took Kayden to a ball drop at 6 for the kiddos. He thought it was pretty cool and I thought it was pretty cheesy. The had the ball at the top of a flag pole and at 6 pm it started it decent down and it took about 30 secs. But we rang in the new year and then went and had Chinese buffet with Nate and Melissa. I love Chinese buffet. So yummy. We came back to the house and decided to watch a movie. Despicable Me. Oh my was it cute. I watched the ball drop in NYC and headed to bed. I think Kayden made it up till 830 or so. We are an early to bed family.
