Lazy Chicken Chili Rellenos







Dinner Last night was good - Dont think I would make it again but good. I Love Chili Rallenos. There is a restaruant in CO that has the best. I need to learn how to make them that way. Shawn said next time to ot use the while chilis just a bunch of the chopped ones. I was wanting something with more structer. I ate all of the top of it. I thought it was the best part. Kayden ate his but kept calling it lobster.






Lazy Chicken Chili Rellenos


1 pound cooked chicken - Chopped
3 small cans of whole Roasted Chiles.
1 small can chopped Chilies
1-½ cup Monterey Jack Cheese, Grated
3 whole Large Eggs
1/2 cups Milk
Salt And Black Pepper To Taste
1/4 teaspoons Paprika
A sprinkle of Cayenne Pepper

Preparation Instructions

Preheat oven to 325 degrees.
Mix together eggs, milk, salt, pepper, paprika and cayenne.
Mix together chicken and chopped chilies
Cut chilies in half and add a single layer of chilies on the bottom of a loaf pan
Top chilies with half the chicken and half the grated cheese
Repeat with another layer of chilies and chicken
Pour egg mixture all over the top and top with more cheese
Place into a larger baking dish or rimmed baking sheet. Pour in 1/2 inch of water and bake for 35 to 45 minutes, or until completely set.
Cut into squares and serve with tortillas chips
